Butternut Squash Fritters

You can use shelled pistachios for quicker prep time.

5-6 cups of shredded butternut squash (from frozen or pre cut)

1/2 cup of pistachios in the shell

2 T coconut oil

2 eggs

2 T whole wheat flour

3 T ground hemp, flax or chia seeds

2 t salt

1 t ground pepper

1 t cinnamon

1 t paprika


  1. Heat 2 T of coconut oil in a cast iron pan on medium-high heat
  2. Shell pistachios 
  3. Shred butternut squash in a food processor
  4. Remove squash from food processor and process shelled pistachios into a rough powder
  5. mix with remaining ingredients
  6. \When oil is shimmering hot, add ice cream scoop sized patties to the oil -- roughly 4 at a time -- press down to flatten slightly
  7. Turn over after 2-3 minutes and cook 2-3 minutes more
  8. Place first batch on paper towels and start second batch (should make roughly 3 batches or 12-14 fritters


Keep fritters warm in the oven at 250 degrees or serve immediately
