Ingredients

  • 32 ounces low sodium V8 vegetable juice
  • 1 1cups chopped cucumbers
  • 1cup sliced celery
  • 1cup chopped green peppers
  • 1cup sliced  scallions
  • medium  tomato, seeded and chopped
  • 1tablespoon minced garlic
  • 1 T lemon juice
  • 1 t red wine vinegar
  • sprig of cilantro (optional)

Directions

  1. Pour V-8 into large bowl.
  2. Add all remaining ingredients and mix well.
  3. Cover and chill for 2 hours
  4. pour into bowls or glasses
  5. Top with cilantro if using
