Chia Pudding

4 cups of unsweetened vanilla almond milk

1/3 cup of chia seeds

3 T Maple Syrup (real, not pancake syrup)

2 t of Vanilla extract

various toppings


Combine all ingredients in a large jar with tight lid or a closed pitcher and shake vigorously to blend. Let rest for five minutes and repeat. Repeat after an additional five minutes. Let sit for at least three hours.

Top with pomegranate seeds as pictured or:

  • coconut cream or whipped cream
  • coconut flakes
  • shaved chocolate or cocoa nibs
  • raspberries or strawberries
  • chopped almonds or granola
  • sliced kiwi or peaches
