Needs a food processor

Cooking Time





2 cups of dates pitted

2 T cocoa powder or cacao (unsweetened) 

1 cup unsweetened coconut flakes 

1/2 cup of pistachios or walnuts 

1.5 T of coconut oil 

water, orange juice (no pulp) or apple juice 


process nuts until they are a gritty powder; add dates, oil, cocoa powder and 1/4 cup of the coconut flakes and continue blending ; add water or juice if the mixture is too heavy/dry;;take spoonfuls of the mixture and roll into balls and then coat in remainder of coconut flakes; 

refrigerate for an hour


Variations in mixture can include: cinnamon, espresso powder, almonds -- use your imagination!
