Leftover Rice Breakfast Porridge

1 C of cooked brown rice

1/3 C of almond or cashew milk

1/2 t of vanilla extract

1/4 t cinnamon

1/4 C of chopped walnuts (pistachios or almonds)

1/3 apple or pear chopped

honey or maple syrup, dollop of yogurt, shredded coconut, or raisins optional


add milk and vanilla extract to sauce pan

add rice and apple and cook over low heat until milk is absorbed or desired consistency is reached

top with remaining ingredients

If not sweet enough add one t of honey or maple syrup.
