Quinoa Salad

1 cup of quinoa

1/4 cup of chopped walnuts, almonds or pistachios

1 t sesame or peanut oil

1 cup of broccoli cut into tiny florets

1 carrot chopped

1/2 cup of grape tomatoes

1 T of lime or lemon juice

salt to taste


Cook quinoa according to package

meanwhile mix juice, oil and salt in a small bowl and set aside

bring a small sauce pan of water to boil and blanch broccoli for 1-2 minutes until bright green. Rinse under cold water to stop cooking and set aside. 

When quinoa is done and broccoli is cool mix all ingredients and stir in oil and vinegar dressing.
