Restorative Miso Soup

6 cups of broth (chicken or vegetable)

 1 6-inch piece kelp 12 ounces of firm tofu cut into half-inch cubs

 1 strip of seaweed

 5-6 shiitake mushrooms

 6 tablespoons of white miso

 2-3 scallions minced (light green to green parts only) 


Boil broth and add kelp to the pot - reduce and simmer 7-10 minutes

Remove kelpAdd the cubed tofu, seaweed and mushrooms and cook on medium high for a few minutes

Put the miso in a bowl and add a small amount of hot soup on top. mis mso with the soup until creamy

Add miso to the soup pot and cook for an additional 2-3 minutesgarnish with scallions


Additions and substitutes:red pepper flakes, carrot matchsticks, shrimp or white fish
