Warming Ginger Mint and Lemon Tea

2 cups water

4 slices lemonĀ 

1/4-inch thick gingerĀ 

12 mint leaves

1 teaspoon honey


  1. Add water, 3 slices of lemon, and chopped ginger slices in a small pot. Bring to a boil, and then reduce to a simmer. Add 10 mint leaves to the pot. Simmer for 10 minutes.
  2. Add honey or agave if using, add more if desired.
  3. Strain and serve the tea with a half slice of lemon and one mint leaf. Makes 2 cups of tea.
